There is a big difference between living in a society that hunts whales and living in one that views them. Nature is being reduced to precious demonstrations for entertainment and education, something far less natural than hunting. Are we headed for a world where nothing is left of nature but parks? Whales are mammals, and mammals do not lay a million eggs. We were forced to give up commercial hunting and to raise domestic mammals for meat, preserving the wild ones as best we could. It is harder to kill off fish than mammals. But after 1,000 years of hunting the Atlantic cod, we know that it can be done.
Mark Kurlansky Quotes: There is a big difference

It turned out that salt was a microcosm for one of the oldest concepts of nature and the order of the universe. From the fourth-century-B.C. Chinese belief in the forces of yin and yang, to most of the world's religions, to modern science, to the basic principles of cooking, there has always been a belief that two opposing forces find completion - one receiving a missing part and the other shedding an extra one. A salt is a small but perfect thing.

Cod meat has virtually no fat (.3 percent) and is more than 18 percent protein, which is unusually high even for fish. And when cod is dried, the more than 80 percent of its flesh that is water having evaporated, it becomes concentrated protein - almost 80 percent protein.

Both Jews and Muslims believe that salt protects against the evil eye. The Book of Ezekial mentions rubbing newborn infants with salt to protect them from evil. The practice in Europe of protecting newborns either by putting salt on their tongues or by submerging them in saltwater is thought to predate Christian baptism. In France, until the practice was abolished in 1408, children were salted until they were baptized. In parts of Europe, especially Holland, the practice was modified to placing salt in the cradle with the child.

The Chinese had first learned of the Roman Empire in 139 B.C., when the emperor Wudi had sent an envoy, Zhang Qian, past the deserts to seek allies to the west. Zhang Qian traveled for twelve years to what is now Turkistan and back and reported on the astounding discovery that there was a fairly advanced civilization to the west. In 104 B.C. and 102 B.C., Chinese armies reached the area, a former Greek kingdom called Sogdiana with its capital in Samarkand, where they met and defeated a force partly composed of captive Roman soldiers.

The main body of Vikings were given lands in the Seine basin in exchange for protecting Paris. They settled into northern France and within a century were speaking a dialect of French and became known as the Normans.

The town of Lunenburg was built on a hill running down to a sheltered harbour. On one of the upper streets stands a Presbyterian church with a huge gilded cod on its weather vane. Along the waterfront, the wooden-shingled houses are brick red, a color that originally came from mixing clay with cod-liver oil to protect the wood against the salt of the waterfront. It is the look of Nova Scotia - brick red wood, dark green pine, charcoal sea.

The word cod is of unknown origin. For something that began as food for good Catholics on the days they were to abstain from sex, it is not clear why, in several languages, the words for salt cod have come to have sexual connotations. In the English-speaking West Indies, saltfish is the common name for salt cod. In slang, saltfish means "a woman's genitals", and while Caribbeans do love their salt cod, it is this other meaning that is responsible for the frequent appearance of the word saltfish in Caribbean songs such as the Mighty Sparrow's "Saltfish".
Mark Kurlansky Quotes: The word cod is of
When the Basque whalers applied to cod the salting techniques they were using on whale, they discovered a particularly good marriage because the cod is virtually without fat, and so if salted and dried well, would rarely spoil. It would outlast whale, which is red meat, and it would outlast herring, a fatty fish that became a popular salted item of the northern countries in the Middle Ages.
Mark Kurlansky Quotes: When the Basque whalers applied

Even the name, Celt, is not from their own Indo-European language but from Greek. Keltoi, the name given to them by Greek historians, among them Herodotus, means "one who lives in hiding or under cover." The Romans, finding them less mysterious, called them Galli or Gauls, also coming from a Greek word, used by Egyptians as well, hal, meaning "salt." They were the salt people.

Typical of Iberia, both the Basques and the Catalans claim the word comes from their own languages, and the rest of Spain disagrees. Catalans have a myth that cod was the proud king of fish and was always speaking boastfully, which was an offence to God. "Va callar!" (Will you be quiet!), God told the cod in Catalan. Whatever the word's origin, in Spain lo que corta el bacalao, the person who cuts the salt cod, is a colloquialism for the person in charge.

It had all been predicted in Herzl's 1902 novel, Old New Land, in which he imagines visiting the new Jewish state in 1923 and finding the Jews not only exploiting the Dead Sea's mineral wealth but making the desert green through irrigation and living in farm collectives that exported produce to Europe. However, he also predicted that Israel would be a German-speaking nation and that Arabs would eagerly welcome Jews for the economic development they would bring to the region.

Newlyn does not look like the Cornish towns on either side: Penzance and Mousehole. Those are resort towns where British vacationers practice that peculiarly British pastime of strolling the beaches and walkways, bundled in sweaters and mufflers. But Newlyn is a fishing town - or, increasingly, an out-of-work fishing town.

Under the rules of colonialism, everything goes to and comes from the mother country. In 1870, the colony of Turks and Caicos was asked to send a crest to England so that a flag for the colony could be designed. A Turks and Caicos designer drew a crest that included Salt Cay saltworks with salt rakers in the foreground and piles of salt. Back in England, it was the era of Arctic exploration, and, not knowing where the Turks and Caicos was, the English designer assumed the little white domes were igloos. And so he drew doors on each one. And this scene of salt piles with doors remained the official crest of the colony for almost 100 years, until replaced in 1968 by a crest featuring a flamingo.

Now, at peace, Jordan has few resources but is full of plans. Mohammed Noufal observed with a smile, All we need is Israel's technology, Egypt's workers, Turkey's water, and Saudi Arabia's oil, and I am sure we can build a paradise here.

They leaned over and scooped up handfuls of salt. The police tried to forcibly remove the salt from their hands. A crowd of dissidents ran onto the beach, picked up salt, and were taken away by the police. The protests went on for days, with waves of salt makers followed by waves of police followed by more salt makers. The police called in reinforcements. Soon the jails were filled, and more and more police and protesters were rushing into Inchuri. The police staged charges, harmless but designed to scare. It didn't work.

It is not an overstatement to say that the destiny of the entire human race depends on what is going on in America today. This is a staggering reality to the rest of the world; they must feel like passengers in a supersonic jetliner who are forced to watch helplessly while a passel of drunks, hypes, freaks, and madmen fight for the controls and the pilot's seat. – Eldridge Cleaver, Soul on Ice, 1968

It is an old remark, that all arts and sciences have a mutual dependence upon each other ... Thus men, very different in genius and pursuits, become mutually subservient to each other; and a very useful kind of commerce is established by which the old arts are improved, and new ones daily invented.

What stronger denunciation of an agrarian society than the charge of bestiality? Even in modern times, when Basque peasants engage in the duel by insults known as xikito, the accusation of bestiality remains a classic attack. And though to most people, sex with a goat would seem sufficiently perverted, it was not even conceded that they had conventional goat sex. It was group sex, and the goat sometimes used an artificial phallus, with the intercourse sometimes vaginal and sometimes anal. According to some accounts, the goat would lift his tail so the women could kiss his posterior while he broke wind. The

Unique to Sichuan, ma is the spicy flavor of a wild tree peppercorn called huajiao - with a taste between peppercorn, caraway, and clove, but so strong that too much will numb the mouth. Two varieties grow in Sichuan, clay red peppercorns and the more perfumey brown ones. La means "hot spice" and is accomplished with small burning red peppers. The combined seasoning, ma-la, defines the taste of Sichuan food.

People who know fresh cod - from the great restaurants of France, to British working-class fish shops, to the St. John's waterfront - all agree on three things: It should be cooked quickly and gently, it should be prepared simply, and, above all, it must be a thick piece. Only a large piece can be properly cooked.

Theoretically, pickling can be accomplished without salt, but the carbohydrates and proteins in the vegetables tend to putrefy too quickly to be saved by the emerging lactic acid. Without salt, yeast forms, and the fermentation process leads to alcohol rather than pickles.

Rich and poor live together in equality. The same food and similar houses are shared by all; wherefore they cannot envy each other's hearths, and so they are free from the vices that rule the world. All your emulation centers on the saltworks; instead of ploughs and scythes, you work rollers [for salt production] whence comes all your gain. Upon your industry all other products depend for, although there may be someone who does not seek gold, there never yet lived the man who does not desire salt, which makes every food more savory. - Cassiodorus,A.D. 523.

On the one side were Confucians, inspired by Mencius, who, when asked how a state should raise profits, replied, "Why must Your Majesty use the word profit? All I am concerned with are the good and the right. If Your Majesty says, 'How can I profit my state?' your officials will say, 'How can I profit my family?' and officers and common people will say, 'How can I profit myself?' Once superiors and inferiors are competing for profit, the state will be in danger.

One of the gabelle's most irritating inventions was the sel du devoir, the salt duty. Every person in the Grande Gabelle over the age of eight was required to purchase seven kilograms (15.4 pounds) of salt each year at a fixed high government price. This was far more salt than could possibly be used, unless it was for making salt fish, sausages, hams, and other salt-cured goods. But using the sel du devoir to make salted products was illegal, and, if caught, the perpetrator would be charged with the crime of faux saunage, salt fraud, which carried severe penalties. Many simple acts were grounds for a charge of faux saunage. In the Camargue, shepherds who let their flocks drink the salty pond water could be charged with avoiding the gabelle.

In every age, people are certain that only the things they have deemed valuable have true value. The search for love and the search for wealth are always the two best stories. At the time when Pope Pius VII had to leave Rome, which had been conquered by revolutionary French, the committee of the Chamber of Commerce in London was considering the herring fishery. One member of the committee observed that, since the Pope had been forced to leave Rome, Italy was probably going to become a Protestant country. "Heaven help us," cried another member. "What," responded the first, "would you be upset to see the number of good Protestants increase?" "No," the other answered, "it isn't that, but suppose there are no more Catholics, what shall we do with our herring?" - Alexandre Dumas, Le grand dictionnaire de cuisine, 1873

It was said that in the markets to the south of Taghaza salt was exchanged for its weight in gold, which was an exaggeration. The misconception comes from the West African style of silent barter noted by Herodotus and subsequently by many other Europeans. In the gold-producing regions of West Africa, a pile of gold would be set out, and a salt merchant would counter with a pile of salt, each side altering their piles until an agreement was reached. No words were exchanged during this process, which might take days. The salt merchants often arrived at night to adjust their piles and leave unseen. They were extremely secretive, not wanting to reveal the location of their deposits. From this it was reported in Europe that salt was exchanged in Africa for its weight in gold. But it is probable that the final agreed-upon two piles were never of equal weight.
