The "omnivore's dilemma" (a term coined by Paul Rozin) is that omnivores must seek out and explore new potential foods while remaining wary of them until they are proven safe. Omnivores therefore go through life with two competing motives: neophilia (an attraction to new things) and neophobia (a fear of new things). People vary in terms of which motive is stronger, and this variation will come back to help us in later chapters: Liberals score higher on measures of neophilia (also known as "openness to experience"), not just for new foods but also for new people, music, and ideas. Every time that an animal eats a plant or another animal, the conversion of food biomass into the consumer's biomass involves an efficiency of much less than 100 percent: typically around 10 percent. That is, it takes around 10,000 pounds of corn to grow a 1,000-pound cow. If instead you want to grow 1,000 pounds of carnivore, you have to feed it 10,000 pounds of herbivore grown on 100,000 pounds of corn. Even among herbivores and omnivores, many species, like koalas, are too finicky in their plant preferences to recommend themselves as farm animals. It's not important whether someone is a gourmet. Everyone wants to eat and knows that food is crucial to live. But everyone has his own special reaction toward food. One person can become so excited about a certain dish that his eyes sparkle and his muscles harden, while someone else shovels in the same dish without paying any thought to what he's eating.
